Tomato Muramba | Sweet & Sour Tomato Jam

Muramba refers to a sweet jam-like side dish. While the more famous muramba is mango muramba, the tomato version can be made in all seasons. The key to a great muramba is to heat the tomatoes in a sugar syrup over a low flame, so that the juices from the tomatoes slowly ooze into the sugar syrup.

Recipe

Prepartion Time: 5 mins Cooking Time: 20 -25 mins
Ingredients: Method:
  • 2 medium-sized tomatoes, roughly chopped
  • 150 gm (8-9 tbsp) sugar
  • 100 mL water
  • pinch of salt 
  • Add the water and sugar in a vessel, and heat
  • Add the tomatoes as the water starts boiling 
  • add pinch of salt 
  • reduce the heat and let the mixture boil for about 15 mins 
  • keep stirring the mixture to make sure tomatoes don’t stick to the pan
  • after 15 mins, cover the vessel and continue to heat for another 10 mins
  • now remove lid and check for the consistency of the mixture. It should be sticky and the tangy smell of the tomatoes should be overtaken by the sweet smell of sugar
Served best with rotis, dal rice and even some toast
