A classic Sunday breakfast at my home, an egg omelette never fails to give me that holiday feeling. This recipe can be tweaked in a number of ways, but I present to you a simpler version of this dish here.

Recipe

Prepartion Time: 10 mins Cooking Time: 5 mins
Ingredients: Method:
  • 2 eggs
  • 1/2 an onion, finely chopped
  • finely chopped green chillies
  • some butter
  • freshly cut coriander
  • salt and pepper to taste
  • Crack the eggs in a bowl and whisk them. Use a fork if you don’t have an egg beater
  • add the onions & the chillies
  • add salt & pepper
  • Heat the butter in a pan over medium heat.  Take care to not heat the pan too much
  • gently pour the egg mixture into the pan
  • let it cook, you may cover the pan for 2-3 mins
  • check after 2-3 mins if the egg looks fluffy
  • once it is cooked, take a spatula and slide it under the entire omelette. Then flip it in one quick motio.
  • Let the other  side cook too. This side cooks faster so take it off the gas in less than a min.
Serve with toasted bread, and garnish with more coriander and cheese (optional)
