Paneer Bhurji

Learn how to make paneer bhurji, or spicy scrambled cottage chesse, Indian-style.

Paneer Bhurji, or spicy scrambled cottage cheese is a delightful vegetarian substitute to spicy scrambled Indian eggs. Can be consumed with bread or rotis.

 

Recipe

Preparation Time: 10 mins Cooking Time: 60 mins
Ingredients: Method:
  • 200g paneer (cottage cheese)  
  • 2 medium-sized onions, finely chopped
  • 1 tomato, chopped 
  • 2-3 green chillies, chopped
  • 1 tsp rai (mustard seeds)
  • 1 tsp jeera (cumin seeds)
  • 1/2 tsp turmeric powder 
  • 1 tsp red chilli powder (optional)
  • pav bhaji masala (if not available, use garam masala)
  • kasoori methi (optional) 
  • salt to taste
  • mash paneer into small lumps and keep aside
  • heat 3 tbsp oil in a pan
  • add mustard seeds and let them sizzle
  • add jeera
  • add the chillies
  • add the onions and stir 
  • fry till they change colour to golden brown
  • add tomatoes and mix well. Let the mixture cook 
  • add turmeric
  • add red chilli powder (you can skip this step if you want to reduce spice content)
  • add pav bhaji masala  
  • add salt and sauté well
  • add paneer and mix well
  • if mixture looks dry, drizzle very little water (optional)
  • cover pan and cook for 2 mins. Be sure to not overcook, paneer becomes rubbery
  • after 2 mins, open lid and add kasoori methi (optional) and mix
  • garnish with coriander 
  • paneer bhurji is ready!
