Maharashtrian Amti | Dal Fry | Ambat Varan

This sweet and sour amti gives a nice twist to your humble yellow dal. What’s more, it can be made with some leftover yellow dal as well.

Ingredients

  • 2 cups toor dal, boiled with water, turmeric and asafoetida and smash the cooked dal into a pulp. (You can also add the turmeric and asafoetida later while cooking).
  • green chillies, based on your spice apetite
  • 7-8 curry leaves
  • a small ball of tamarind, soaked in warm water
  • some jaggery
  • 1 tsp mustard seeds (rai)
  • salt to taste
  • Add 2 1/5 tbsp oil in a deep vessel
  • add mustard seeds, let them sizzle
  • add green chillies and curry leaves 
  • add the dal quickly so the curry leaves don’t burn
  • add some water based on how think you want the dal to be 
  • add tamarind pulp
  • add jaggery
  • add salt to taste
  • add coriander to garnish (optional)
