Grilled Lamb Chops in Salt & Pepper

Juicy, hot lamb chops even without a griller, is what this recipe is about. You may not get the grilled marks on your lamb or the smell of charcoal, but the flavour of pepper oozed into the lamb’s own fat makes up for it.

Ingredients: Method:
  • 4 fresh lamb cuts (mutton chops will also do)
  • ground pepper
  • salt
  • fresh lemon juice (optional)
  • Add a little oil on a flat pan
  • sprinkle copious amounts of pepper onto the lamb chops on all sides. sprinkle salt as well. 
  • Place the lamb chops on the heated pan. Make sure the pan is heated well before adding the lamb chops
  • Do not flip the chops soon. Let them sizzle for a while. You should see oil from the lamb start to ooze out onto the pan.
  • Squeeze the lemon (optional)
  • Now flip them over. Do not flip them too much, they might get dry. So ensure one side is well done before flipping.
  • To check if they cooked well, you may cut a small portion from the side and check the colour of the meat. If it looks raw pink, it needs further cooking.
  • Once they are cooked, take them off the heat and let them soak on a paper towel to remove excess fat.
