Gajar Matar ki Sabzi | Carrots with Peas & Tomatoes

A rather versatile sabzi, can be made with a gravy or in a dry form based on your taste.

Ingredients

    • 250 gm carrots, diced
    • 100 gm green peas
    • 2 medium-sized onions, finely chopped
    • 3 ripe tomatoes, chopped
    • 1/2 tsp red chilli powder
    • 3 green chilles (optional)
    • 1/2 tsp ginger paste or fresh ginger
    • 1-2 bay leaves
    • few cardamom pods (elaichi)
    • 1/2 tsp turmeric powder
    • 1 1/2 cumin coriander powder (dhana jeers powder)
    • 1/2 tsp cumin seeds
    • salt to taste
    • Heat 3 tbsp oil in a pan
    • add 1/2 tsp cumin seeds, bay leaves and cardamom and let them sizzle
    • add the onions, saute and let them turn golden brown
    • add garlic paste
    • add tomatoes
    • add 1/2 tsp turmeric powder, red chilli powder and green chillies
    • cook this for a few minutes and you will get the aroma of the tomotoes
    • add the diced carrots
    • add 1 tsp cumin coriander powder
    • now add the green peas
    • add salt to taste
    • add a bit of water, if needed
