Egg Masala Curry | Dhaba Style Anda Masala

Prepartion Time: 20 mins Cooking Time: 30 mins
Ingredients: Method:
  • 6 Boiled Eggs
  • 1 small onion, chopped
  • 2 ripe tomatoes, chopped
  • fresh chillies as per your spice requirements 
  • some curry leaves
  • 1 tsp ginger garlic paste
  • coriander to garnish
  • chopped coriander roots (optional)
  • 1/2 tsp mustard seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder
  • 1 tsp coriander powder
  • 1/2 tsp garam masala
  • salt to taste

Frying the eggs (optional):

  • In a pan, heat 2 tbsp oil
  • add all the boiled eggs and fry in the hot oil till they are slightly golden brown
  • keep the eggs aside for adding in the curry later

Curry: 

  • In the same pan heat some oil, add mustard seeds, cumin seeds and let them sizzle
  • add onions and sauté well
  • add fresh chillies 
  • add curry leaves and chopped roots of coriander
  • add ginger garlic paste, sauté well
  • add chopped tomatoes and cook till they are soft
  • add 1/2 tsp turmeric powder, red chilli powder, garam masala & coriander powder
  • sauté well, & cook till the raw smell of the spices is gone
  • add the fried eggs and mix them delicately so that they are not broken
  • add little water and salt to taste
  • cook for 2 mins
  • take it off the gas
  • garnish with coriander and serve with bread, chapati or rice, & enjoy!
