Properly done scarmbled eggs have a custard-like consistency that just holds its shape from the fork to your mouth!

Recipe

Ingredients: Method:
  • Eggs – 3
  • Milk
  • Butter

Spices

  • 1/2 tsp turmeric powder
  • 1 tsp red chilli powder
  • 1 tsp Garam Masala / Parbhi Sambar (Pathare Prabhu Garam Masala)
  • salt to taste
  • Break the eggs in a bowl
  • Add 1 1/2 tsp milk (1/2 tsp milk for 1 egg each)
  • add salt & pepper
  • whisk the mixture with a fork for about a minute 
  • on gentle heat add generous amounts of butter in the pan
  • pour the egg mixture on the heated pan and stir continuously. 
  • as the mixture starts thickening stir more rapidly if required
  • Make sure the pan is not too hot and take it off the heat as soon as you see the eggs thicken. If kept too long, the scrambled eggs will not be fluffy. 
  • As soon as the eggs have a custard-like consistency, take the pan off the gas, serve & enjoy!

Best enjoyed with some toasted bread
