Aloo Gobi | Cauliflower batata sukhi bhaji

Let’s face it, cauliflower is not everyone’s favourite. But you can toss up a surprisingly good Indian stir-fry with this recipe.

Recipe

Prepartion Time: 10 mins Cooking Time: 20 mins
Ingredients: Method:
  • 1 full cauliflower around 700 gms, break it into small pieces
  • 1 medium size onions diced finely
  • 2 potatoes chopped
  • fresh coriander to garnish
  • lemon juice

Spices

  • 1 tsp mustard seeds (rai)
  • 1 tsp cumin seeds (jeera)
  • pinch of asafoetida (hinga)
  • 1/2 tbsp ginger & garlic paste
  • 1/2 tsp turmeric powder
  • 1/2 tsp red chilli powder (quantity can vary as per your spice eating capacity)
  • 1/2 tsp garam masala powder (or a ny mix masala)
  • 1 tsp sugar
  • salt to taste
  • Heat 2 1/2 tbsp oil in a pan
  • add mustard seeds, cumin seeds and asafoetida
  • once the mustard and cumin start sizzling add diced onions and let them be golden brown
  • add ginger & garlic paste and sauté well
  • add the spices, turmeric, red chilli and garam masala and mix well
  • add the chopped potatoes, sugar and salt to taste again mix well
  • add little water and let the potatoes cook a bit by covering the pan
  • after 3-4 mins when the potatoes are half cooked give a gentle stir
  • add the cauliflower pieces and mix gently so that all the spices are mixed well
  • add little water cover than pan and let it cook for another 8-10 mins
  • open the pan and check, if the cauliflower is not cooked, cover the pan again and cook until its cooked
  • once it is cooked, open the pan, squeeze some fresh lemon juice if you like and also add some chopped coriander to garnish
